My Mother's Day Gift To You

Happy Mother’s Day dear friends.  The following recipe is my gift to you, because you are all so sweet.  DH loves a good dessert after dinner.  I need to have something sweet yet healthy for him to eat or he goes for the junky, gooey stuff that isn’t very good for him.  For me the gooey, sweet, junky, unhealthy stuff all works!  Anyway, he especially likes apple pie.  In an effort to cut the calories and other not so healthy stuff, I have worked for months to perfect an apple cobbler that is sweet without being filled with sugar and butter, gooey in a yummy, caramel-y way and lower in calories/points which I count faithfully (for both of us).

I have fine-tuned the recipe by cutting the sugar, flour and butter as much as possible and still have a delicious cobbler.  Now I’m ready to share it. 

Kat’s Apple Cobbler

Apple filling:
4 to 5 cups of apples (my favorite is Granny Smith but Fuji and Delicious work well too)
½ cup brown sugar
¼ cup granulated sugar
2 tablespoons flour
½ teaspoons cinnamon
1 full teaspoon vanilla extract
¼ teaspoon salt
1 tablespoon butter

Topping:
1 cup all-purpose flour
½ cup granulated sugar
1 teaspoon baking powder
½ teaspoon salt
4 tablespoons softened butter
2 eggs lightly beaten

Instructions:
Chop apples into small pieces (rather than the slices you would arrange in a pie).
Place apples into large mixing bowl and stir in filling spices.  Pour into 11” X 13” baking pan.
(A smaller pan will work but baking time should be increased slightly to make sure the apples are thoroughly cooked).

Using the same bowl from the apple filling (without washing) mix all topping ingredients, using a mixer or blending by hand.  Topping will be thick.  
 
Spread topping over the apple filling and smooth as much as possible but there should be holes in the topping which will fill in and also allow the apple mixture to bubble through in places while baking.  


Bake at 375° for around 40 minutes.  If the topping begins to brown early you can place a piece of aluminum foil over the top.

My favorite way to serve the cobbler is to spread a cup of icing made with powdered sugar thinned with lemon juice over the top, after the cobbler cools a bit.  Happy dessert time!  If you try this, please let me know how the recipe worked for you. 

BTW:  I ran this through WW recipe builder and it is 4 Points.  I can only guess that it translates into approximately 200 calories.
